Aug. 17th, 2007 10:42 amOne of my least favorite things in the entire universe (aside from injustice, and people who suck) is recipes that aren't restaurant ready. Seriously, people, if you are writing a recipe, you have to assume that the people reading it will be less able in a kitchen than you are. Therefore, (and I really don't get why this part is rocket science) you should write the steps in the most efficient order! Tell people to chop onions while stock is simmering! Roast red peppers while blending! Etc, etc! And, I can not emphasize this enough, you must list all the ingredients at the top of a recipe. People don't read all the instructions first. They really, really don't.
So many good recipes are ruined by that- things take forever, or two trips to the grocery store, plus forever, and dang, no wonder some people hate cooking.
Anyway, I am making an excellent chowder today (because corn is FIVE for a DOLLAR here), and I have rewritten the recipe so it doesn't suck, and I thought I'd share.
